How to Make One Pan Spicy Chicken Rigatoni

This spicy chicken rigatoni is a great easy weeknight dinner! The one pan cooking method infuses the pasta with tons of flavor and means fewer dishes for you to wash!

Here's what you'll need to make spicy chicken rigatoni.

Butterfly and pan sear a chicken breast in a medium straight-sided sauté pan. Remove to a plate to rest.

Add the shallots to the  pan and cook until soft. Then add the garlic and cook one more minute.

Add the tomato paste, followed by the crushed red pepper flakes, stirring well. Cook until the tomato paste begins to caramelize.

Add the dried rigatoni directly to the pot along with cherry tomatoes.. Fill the pot with water, just enough to barely cover the pasta.

Bring to a boil and set a timer for the "al dente" cook time on the box. Stir constantly as the water absorbs and boils away. If the water disappears too quickly, add more in small amounts only if needed.

When the pasta is cooked through and very little water remains, stir in the parmesan and fresh basil.

Then stir in the fresh sliced basil.

Slice the chicken and add it back to the pasta.

Serve and enjoy! Top with more fresh basil and parmesan cheese to garnish.
