These homemade pumpkin spice bagels have pumpkin puree and warm pumpkin spices in the dough and are topped with cinnamon sugar!
Combine bread flour and instant yeast in the bowl of your mixer.
Combine pumpkin puree and warm water and mix well. Then add it to the flour.
Mix well with until the liquid is absorbed. Then use your hands to pinch and squeeze the dough together. It will still be quite dry. Cover and rest for 10 minutes.
While the dough rests, combine sugar, salt, pumpkin spices, and water . Add them to the dough and knead until the dough is smooth and elastic.
Be patient, the kneading step can take several minutes!
Let the dough rise for an hour, then divide into 8 pieces, Shape them into rounds, then cover with a damp paper towel for 10 minutes.
Use floured hands to poke a hole through the bottom of each dough ball. Squeeze and rotate the dough through your hands to shape the bagels.
Boil the bagels for 1 minute per side, then remove to a lined sheet pan.
Bake for 20 minutes at 425F. Let cool on the pan for a few minutes, then remove to a rack to cool completely.
