Here are the ingredients you'll need to make this rosemary parmesan bread!
Mix flour, salt, and yeast together in a bowl or bucket.
Then add freshly grated parmesan cheese and finely minced fresh rosemary.
Pour in the cool water, then stir to form a wet, sticky dough.
Cover and let rise at room temperature for 18-20 hours.
When the dough is ready to shape, it will have a flat or slightly domed and bubbly top.
Turn the dough out onto a floured counter top and shape into a log with all the edges tucked underneath.
Transfer the loaf to a sheet of parchment paper. Dust with flour, cover with a towel and let it rest for 30 minutes while the Dutch oven preheats.
Right before baking, score the top of the loaf to vent.
Use the parchment paper to lift the loaf into the Dutch oven. Cover and bake for 30 minutes with the lid on (no peeking!).
Uncover and bake for 10-15 minutes more.
Let cool completely before slicing to give the starches time to set.
