How to Make Fresh Goat Cheese

This creamy goat cheese is perfect spread on crackers, bagels and bread, crumbled over salads and more!

Here are the ingredients you will need to make homemade goat cheese!

Mix citric acid with water and stir to dissolve.

Pour the goat milk into a medium pot, then stir in the water and citric acid.

Cook over medium heat, stirring frequently, until the goat milk reaches 185F.

Remove from heat and let sit undisturbed for 15 mins. The curds and whey will begin to separate.

Assemble your straining station. Line a colander with a towel and put it inside a bucket.

Strain the goat cheese through the towel in the colander.

Clip the towel in place, then cover and leave for one hour.

After about an hour, twist the ends of the towel together tightly. Strain for a total of 4-6 hours.

When the cheese has reached your desired consistency, unwind the towel and scrape down the sides.

Season the goat cheese with salt, and add any other flavors you like. Firm goat cheese can be rolled into a log!
