Cut day old focaccia into cubes 1 inch or smaller.

Drizzle with olive oil, salt, and herbs.

Stir well. Add more oil if needed to help the herbs stick.

Arrange the focaccia cubes spaced out in an even layer on a sheet pan.

Dry in a 250°F oven, stirring every 15-20 minutes.

They can take anywhere from 45 minutes to 2 hours to dry completely!

Let cool completely, then serve on soups and salads!
