This is a great technique for beginners or anyone who is picky about their egg yolks!
Crack the egg white into shimmering oil in a small skillet, saving the egg yolk in the egg shell.
Cook the egg white over low heat. If needed, use a spatula to push it into a neater shape.
Season the egg white with salt and pepper.
When the egg white is cooked through, tip the egg yolk onto it. Tilt the pan to keep it in place.
Season the yolk. Cook until the yolk relaxes and sets onto the white to stay in place.
Plate and slice!
