This is a great technique for beginners or anyone who is picky about their egg yolks!

Crack the egg white into shimmering oil, saving the egg yolk in the egg shell off to the side.

Season with salt and pepper, and cook the egg white over low heat until set.

When the egg white is cooked through, tip the egg yolk onto it. Tilt the pan if needed to keep it in place.

Season the yolk. Cook until the yolk relaxes and sets onto the white to stay in place.
