This soft and fluffy overnight focaccia has a crispy bottom and golden brown top. It's a great recipe for beginners!
Combine flour, salt, and yeast.
Add water and olive oil and mix until a messy dough forms. Cover and rest 5 minutes.
Use damp hands to grab the top edge of the dough, fold it across the center, rotate and repeat all the way around. Cover and rest 15 minutes.
Repeat the folding process on the dough. After the final fold, flip it over so the seam side is down.
Spray a baking pan with non-stick spray and drizzle with olive oil. Slide the dough into the pan. Cover and rise 8-12 hours.
When the dough is airy and has filled in the pan, drizzle with olive oil and dimple all over. Add any toppings. Cover while the oven preheats.
Bake at 400F for 20-25 minutes until golden brown on top.
Drizzle with olive oil immediately after removing it from the oven. Let cool in the pan, then remove to a rack so it doesn't get soggy!
