Easy One Pan Cacio e Pepe Rigatoni Pasta

This is an absolutely FOOLPROOF and easy method for making cacio e pepe pasta all in one pan.

The pasta absorbs the peppery flavors as it cooks, and the super starchy pasta water makes for a silky sauce.

Here are the ingredients you will need to make one pan cacio e pepe!

Melt butter in a wide, high-sided saute pan. Then add pepper and stir to bring out the flavors.

Add uncooked rigatoni to the pan. Stir. Then add just enough water to barely cover the pasta.

Bring to a boil. When the water boils, set a timer for the "al dente" cook time on the box. Cook, stirring constantly until the pasta is cooked and little water remains.

Add finely grated pecorino romano and parmesan cheeses. Stir to melt. Add additional water if needed to loosen the sauce and prevent clumping.

Serve immediately, garnished with additional black pepper and cheese!
