Make the brown butter, pour into a heat proof container and set aside to cool.
Wipe out the skillet and reduce the apple cider over medium heat, stirring frequently.
Place in the fridge along with the brown butter to cool for 1 hour.
Whisk together flour, salt, baking powder, and apple pie spices. Peel and mince the apple for later as well.
Bring the eggs to room temperature too.
When the butter is cool and solid but still soft, combine with brown and white sugar and beat well until light and fluffy.
Pause to scrape down the bowl at least 3 times during this initial mixing stage.
Add the eggs one at a time, beating well and scraping down the bowl after each.
Alternate adding dry ingredients and apple cider reduction on low speed until almost combined.
Finish mixing any excess flour into the batter by hand as you stir in the apple pieces.
Transfer to a greased and lined loaf pan, smooth out the top, and top with cinnamon sugar.
Bake until a cake tester comes out with just a few crumbs on it.
