With quick pickled red onions!
This small batch guacamole recipe uses just one avocado!
It's the perfect snack sized portion or small amount to add to a bigger meal like tacos, egg toast, etc.
First, cut open your avocado. If it's good, great! Proceed. If not, I'm sorry, no guac for you.
Combine minced red onion and lime juice in a small bowl with a pinch of salt. This quick pickles the red onion to take the raw edge off.
While the onion and lime juice sit, mince up some jalapeño and add it. For a milder heat use poblano pepper or omit entirely.
Add the avocado and mash with a fork to combine.
Finally, stir in any delicate herbs or final seasonings like cilantro, pepper, or cayenne!
So good straight out of the bowl, or served with a fried egg on toast!
