This one-bowl brownie cookie recipe makes giant, chewy chocolate cookies stuffed with whole peppermint patties!
Melt the butter and chocolate together in a large bowl.
Whisk in the brown sugar until thick and smooth.
Add the eggs one at a time, whisking well in between. Add the peppermint extract along with the second egg.
Sift in the dry ingredients to prevent lumps and clumps.
Fold the dry ingredients into the wet ingredients until combined.
Cover and chill in the fridge for 1 hour.
Use a #40 scoop to portion out the cookie dough.
Sandwich a fun size peppermint patty between two scoops of cookie dough and pinch to seal the edges shut.
Arrange the brownie cookies with space between them to expand and bake.
Optional: Use a round cutter to scoot the cookies into perfectly round shapes immediately after removing from the oven.
