How to Make Overnight Brioche Dinner Rolls

This beginner-friendly recipe for buttery brioche dinner rolls recipe uses a long cold rise in the fridge so you can prep your rolls in advance and bake them up in time for dinner!

Here are the ingredients you'll need to make overnight brioche dinner rolls!

Flour | Honey | Whole Milk Egg | Salt | Yeast | Butter

Whisk together flour, salt, and yeast in a stand mixer bowl.

In a separate container, whisk together milk, honey, and egg.

Mix with a dough hook until combined, then knead until smooth and elastic.

Add butter one tablespoon at a time, giving each piece time to incorporate completely before adding more.

Knead until the dough passes the windowpane test.

Shape into a ball, cover, and let rise at room temperature for one hour.

Deflate the dough and divide into 16 equal pieces.

Shape each piece into a tight ball.

Arrange in rows in a greased and lined square baking pan, cover and place in the fridge overnight (12-24 hours).

Remove the rolls from the fridge 30-60 minutes prior to baking. Brush with an egg wash before baking.
