How to Shape Giant Arancini

These giant, crowd-pleasing arancini are stuffed with ground beef, peas, and cheese.

Scoop 1/2 cup arborio rice mixture into the palm of one hand and make a dent in the center.

Scoop 1/4 cup cooked crumbled sausage and peas, 1 TBSP ricotta, and fresh mozzarella into the center.

Scoop another 1/2 cup of rice mixture into your other hand. This will be the other half of the arancini.

Use the back of your hand to make a dent in this scoop of the rice mixture.

Cup the rice over the filling and shape into a ball. Patch thin spots with more rice if needed to seal completely.

Coat the outside of the arancini with a mixture of breadcrumbs and fresh parsley.

Fry for 10 minutes at 325F in peanut or canola oil. Use a wire spider to prevent oil splashes.

Transfer to a plate with marinara sauce, and grate parmesan cheese over top. Enjoy!
