This is a riff on the pasta verde recipe from the Moosewood Cookbook
Toss the sauce with pasta before serving or serve it over top — the choice is yours!
Here are the ingredients you'll need to make this green spaghetti sauce.
Sweat down onion and garlic until soft. Then add still-damp rinsed spinach to the pan and stir gently.
Cover the pan and reduce heat to low, letting the spinach wilt, about 3-4 minutes.
Blend hot spinach and onion mixture along with the rest of the sauce ingredients until smooth and creamy.
Drain pasta and return to the pot off heat. Add the green spaghetti sauce and stir to coat the noodles.
Top with toasted slivered almonds and finely grated pecorino romano cheese. Serve immediately!
